Maple Glazed Chicken with Vegetable Orzo
Succulent Maple Glazed Chicken with Colorful Vegetable Orzo
Ingredients:
4 boneless, skinless chicken breasts
1/3 cup pure maple syrup
2 tablespoons low-sodium soy sauce
2 tablespoons olive oil
2 cloves garlic, minced
1 tablespoon Dijon mustard
1 teaspoon paprika
Salt and black pepper to taste
1 1/2 cups orzo pasta
1 medium zucchini, diced
1 red bell pepper, diced
1 carrot, shredded
1 small red onion, finely chopped
1/2 cup frozen peas
2 tablespoons fresh parsley, chopped
Directions:
In a small bowl, whisk together maple syrup, soy sauce, olive oil, garlic, Dijon mustard, paprika, salt, and pepper. Pour half the mixture over the chicken breasts and marinate for at least 30 minutes.
Preheat oven to 375°F (190°C). Place marinated chicken on a baking sheet lined with parchment paper and bake for 25–30 minutes, basting halfway through with remaining glaze, until chicken is cooked through and golden.
Meanwhile, bring a pot of salted water to a boil and cook orzo pasta according to package directions. Drain and set aside.
Heat a drizzle of olive oil in a large skillet. Add onion, zucchini, bell pepper, and carrot. Sauté for 5–6 minutes until tender. Stir in peas and cooked orzo. Toss with fresh parsley, salt, and pepper.
Serve maple glazed chicken over the vegetable orzo, spooning extra glaze on top.
