Brownie-Cookie Brookies
Ingredients:
- 1 cup all-purpose flour
- 1/2 cup cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup chocolate chips
- 1 1/4 cups all-purpose flour (for cookie layer)
- 1/2 teaspoon baking soda
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup chocolate chips (for cookie layer)
Directions:
1. Preheat oven to 350°F (175°C). Grease a 9x9-inch baking pan or line it with parchment paper.
2. In a medium bowl, whisk together 1 cup flour, cocoa powder, baking powder, and salt.
3. In another large bowl, combine melted butter and granulated sugar. Beat in eggs one at a time, then stir in vanilla extract.
4. Gradually add the dry ingredients to the wet ingredients and mix until just combined. Fold in 1 cup chocolate chips.
5. Pour the brownie batter evenly into the prepared baking pan and spread smoothly.
6. For the cookie layer, beat softened butter and brown sugar together until creamy.
7. Add the egg and vanilla extract, mixing well.
8. In a separate bowl, whisk together 1 1/4 cups flour and baking soda. Gradually add to the butter mixture, mixing until combined.
9. Fold in 1/2 cup chocolate chips.
10. Drop spoonfuls of cookie dough evenly over the brownie batter in the pan. Gently spread or pat the cookie dough to cover as much surface as possible without mixing the layers.
11. Bake for 30-35 minutes or until a toothpick inserted into the brownie layer comes out with moist crumbs but no raw batter.
12. Cool completely before slicing into squares.
