Magic Lemon Cobbler
Ingredients:
½ cup (1 stick) butter
1 cup flour
1 ½ teaspoons baking powder
¼ teaspoon salt
1 cup sugar
1 cup buttermilk
1 teaspoon vanilla extract
1 teaspoon lemon extract
21-ounce can lemon pie filling
powdered sugar to dust with
Instructions:
Preheat your oven to 350°F .
Place the butter in a 9x13 inch baking dish and put it in the oven to melt while the oven preheats. Keep an eye on it to make sure it doesn't burn.
In a medium bowl, whisk together the flour, baking powder, salt, and sugar.
Add the buttermilk, vanilla extract, and lemon extract to the dry ingredients. Stir until just combined.
Remove the baking dish with the melted butter from the oven. Pour the batter over the melted butter, but do not stir.
Spoon the lemon pie filling evenly over the batter. Again, do not stir.
Bake in the preheated oven for 45-50 minutes. Dust with powdered sugar before serving.
