Irresistible Tiramisu Brownies with 2 Coffee Layers
Ingredients:
- 1/2 cup unsalted butter
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/3 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1/2 cup strong brewed coffee, cooled
- 1/2 cup mascarpone cheese
- 1/4 cup powdered sugar
- 1/2 teaspoon coffee extract
- 1/2 cup heavy cream
- Cocoa powder for dusting
Directions:
1. Preheat oven to 350°F (175°C). Grease an 8x8 inch baking pan.
2. In a medium saucepan, melt butter over low heat. Remove from heat and stir in sugar, eggs, and vanilla.
3. Beat in cocoa, flour, salt, and baking powder. Spread half of the batter evenly into the prepared pan.
4. Pour half of the brewed coffee evenly over the brownie layer.
5. Bake for 15 minutes or until set but still soft.
6. Meanwhile, in a mixing bowl, combine mascarpone cheese, powdered sugar, and coffee extract.
7. In a separate bowl, whip heavy cream until stiff peaks form, then gently fold into the mascarpone mixture.
8. Spread the mascarpone cream over the baked brownie layer.
9. Pour the remaining brownie batter over the mascarpone cream, spreading evenly.
10. Drizzle the remaining coffee over the top layer.
11. Bake for an additional 20-25 minutes or until a toothpick inserted near the center comes out with moist crumbs.
12. Cool completely, dust with cocoa powder before serving.
