๐ฎ Shrimp Quesadillas
๐ง Ingredients:
1/2 lb (225g) raw shrimp, peeled and deveined
1 tablespoon olive oil
1 garlic clove, minced
1/4 teaspoon smoked paprika
Salt and pepper to taste
1/4 cup diced tomatoes (fresh or canned, drained)
1/4 cup chopped onion
1/4 cup chopped cilantro
1 cup shredded cheese (Mexican blend or cheddar)
4 flour tortillas (medium-sized)
Butter or oil for cooking
๐ฅ Instructions:
Cook the Shrimp: In a skillet, heat olive oil over medium heat. Add garlic, then shrimp. Season with paprika, salt, and pepper. Cook for 2โ3 minutes until shrimp are pink and opaque. Remove from heat and chop roughly.
Assemble Quesadillas: On one half of a tortilla, layer cheese, shrimp, diced tomatoes, onion, and cilantro. Fold over.
Toast: In a clean skillet over medium heat, melt a little butter or drizzle oil. Cook each quesadilla 2โ3 minutes per side until golden brown and crispy.
Slice & Serve: Cut into wedges. Serve hot with salsa, sour cream, or guacamole.

For extra heat, add jalapeรฑos or a splash of hot sauce.
Make it creamier with a touch of cream cheese inside.
