1/2 lb (225g) raw shrimp, peeled and deveined

1 tablespoon olive oil

1 garlic clove, minced

1/4 teaspoon smoked paprika

Salt and pepper to taste

1/4 cup diced tomatoes (fresh or canned, drained)

1/4 cup chopped onion

1/4 cup chopped cilantro

1 cup shredded cheese (Mexican blend or cheddar)

4 flour tortillas (medium-sized)

Butter or oil for cooking

Cook the Shrimp: In a skillet, heat olive oil over medium heat. Add garlic, then shrimp. Season with paprika, salt, and pepper. Cook for 2โ€“3 minutes until shrimp are pink and opaque. Remove from heat and chop roughly.
