🥓 Saltimbocca di Mare
A seafood version of the Roman classic, with fish fillets wrapped in prosciutto and sage.
Ingredients
• White fish fillets: 4 (cod, halibut, or sole)
• Prosciutto: 4 slices
• Fresh sage leaves: 4
• Butter: 3 tbsp
• White wine: ½ cup (120 ml)
• Olive oil: 2 tbsp
• Salt and pepper: to taste
Instructions
1️⃣ • Season fish with salt and pepper.
2️⃣ • Place sage leaf on each fillet, wrap with prosciutto.
3️⃣ • Heat olive oil and butter in skillet.
4️⃣ • Cook wrapped fish 3–4 minutes per side.
5️⃣ • Deglaze pan with white wine, simmer sauce until slightly thickened.
6️⃣ • Serve fish drizzled with sauce.
