Mexican Cornbread๐บ๐ธ๐ฏโค๏ธ๐๐๐๐
Ingredients:
1 cup cornmeal
1 cup all-purpose flour
1 tbsp sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup buttermilk
1 large egg
1/4 cup melted butter
1/2 cup canned corn kernels
1/4 cup diced jalapeรฑos
1/2 cup shredded cheddar cheese
Instructions:
Preheat the oven to 375ยฐF (190ยฐC). Grease a baking dish or cast-iron skillet.
In a large bowl, whisk together cornmeal, flour, sugar, baking powder, baking soda, and salt.
In a separate bowl, mix buttermilk, egg, and melted butter. Stir into the dry ingredients.
Fold in corn kernels, diced jalapeรฑos, and cheddar cheese.
Pour the batter into the prepared dish and bake for 25-30 minutes until golden brown and a toothpick comes out clean.
Let cool slightly before serving.
