One-Pan Marry Me Chicken with Orzo
Ingredients:
4 boneless, skinless chicken breasts
Salt and black pepper to taste
1 tbsp olive oil
2 tbsp unsalted butter
3 garlic cloves, minced
1 cup chicken broth
½ cup heavy cream
½ cup grated Parmesan cheese
½ cup sun-dried tomatoes, chopped
1 tsp dried thyme
1 tsp dried oregano
1 cup orzo pasta
2 cups baby spinach
Fresh basil, for garnish
Directions:
Sear the Chicken: Season chicken breasts with salt and pepper. In a large skillet over medium-high heat, heat olive oil and sear the chicken until golden brown on both sides, about 3-4 minutes per side. Remove and set aside.
Make the Sauce: In the same skillet, melt butter and sauté garlic until fragrant. Stir in chicken broth, cream, Parmesan, sun-dried tomatoes, thyme, and oregano. Bring to a gentle simmer.
Add Orzo & Simmer: Stir in the orzo and nestle the chicken breasts back into the skillet. Cover and simmer over low heat for 12-15 minutes, until the orzo is tender and the chicken is cooked through.
Finish & Serve: Stir in spinach and cook until wilted. Garnish with fresh basil and extra Parmesan, if desired. Serve warm right from the pan.
