1 ½ cups all-purpose flour
½ teaspoon baking soda
½ teaspoon baking powder
¼ teaspoon salt
½ cup unsalted butter, softened
¾ cup packed brown sugar
2 large eggs
1 teaspoon vanilla extract
½ teaspoon butter extract
½ cup cream soda
¼ cup buttermilk
For the Frosting:
½ cup unsalted butter, softened
¼ cup butterscotch sauce (store-bought or homemade)
1 teaspoon butter extract
2 cups powdered sugar
1-2 tablespoons heavy cream (as needed for consistency)
Extra butterscotch sauce for drizzle (optional)
INSTRUCTIONS :
1- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
2- In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
3- In a separate large bowl, cream together the butter and brown sugar until light and fluffy.
4- Beat in the eggs one at a time, then mix in vanilla and butter extracts.
5- Add the dry ingredients in three parts, alternating with cream soda and buttermilk. Begin and end with the dry ingredients.
6- Fill cupcake liners about 2/3 full with batter.
7- Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean. Let cool completely.
8- For the frosting, beat the butter until creamy. Add the butterscotch sauce and butter extract and mix until smooth.
9- Gradually add powdered sugar and beat until fluffy, adding heavy cream as needed to reach desired consistency.
10- Pipe or spread frosting onto cooled cupcakes. Drizzle with extra butterscotch sauce if desired.
