Creamy Parmesan Italian Sausage Soup
Ingredients:
1 lb Italian sausage, casings removed
1 medium onion, chopped
2 cloves garlic, minced
4 cups chicken broth
1 can (14.5 oz) petite diced tomatoes
8 oz ditalini pasta or other small pasta
1 teaspoon Italian seasoning
4 oz cream cheese, softened
½ cup grated Parmesan cheese
½ cup heavy whipping cream
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Directions:
In a large pot, cook the Italian sausage over medium heat until browned, breaking it apart as it cooks. Drain any excess grease.
Add the chopped onion to the pot and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute.
Pour in the chicken broth and diced tomatoes (with their juice). Bring the mixture to a boil.
Add the ditalini pasta and Italian seasoning to the pot. Reduce the heat to a simmer and cook until the pasta is al dente, approximately 8-10 minutes.
Reduce the heat to low. Stir in the softened cream cheese, grated Parmesan cheese, and heavy whipping cream until fully incorporated and the cheeses have melted.
Season the soup with salt and pepper to taste. Simmer for an additional 5 minutes to allow the flavors to meld.
Serve hot, garnished with chopped fresh parsley.
