For the Chicken:
2 boneless, skinless chicken breasts
1 tbsp olive oil
1 tsp paprika
1/2 tsp cumin
1/2 tsp garlic powder
Salt & pepper to taste
For the Veggies:
1/2 yellow bell pepper, sliced
1/2 cucumber, thinly sliced
1 cup cherry tomatoes, halved
Fresh parsley or cilantro (optional)
For the Yogurt Sauce:
1/2 cup plain Greek yogurt
1 tbsp lemon juice
1 tbsp olive oil
1 garlic clove, minced
2 tbsp fresh parsley or cilantro, chopped
Salt & pepper to taste
To Serve:
4 soft tortillas or taco shells

Rub the chicken breasts with olive oil and spices, then grill on medium-high heat for 5–6 minutes per side or until fully cooked. While the chicken is cooking, mix all yogurt sauce ingredients in a small bowl. Warm tortillas slightly in a pan. Slice the grilled chicken and assemble the tacos: fill each tortilla with veggies, grilled chicken, and a generous spoonful of the herby yogurt sauce. Serve fresh and enjoy!
