Creamy Smothered Chicken with Spinach, Potatoes, and Mushrooms
Ingredients:
- 2 boneless chicken breasts
- 1 cup baby spinach
- 1 cup sliced mushrooms
- 2 medium potatoes, diced
- 1 cup heavy cream
- ½ cup chicken broth
- ½ tsp salt
- ½ tsp black pepper
Instructions:
1. Cook chicken breasts in a skillet until golden brown, then set aside.
2. In the same pan, sauté mushrooms and potatoes until softened.
3. Add chicken broth, heavy cream, salt, and pepper, stirring well.
4. Return chicken to the pan, add spinach, and cook until sauce thickens.
