Salty Cheesecake with Avocado and Salmon 🥑 Che

Ingredients:
- 200g of fresh cheese
- 1 ripe avocado
- 50 grams of melted butter
- 200g of saltine biscuits
- 3 eggs
- 150 g of smoked salmon
- 1 lemon (juice and zest)
- Salt and pepper to taste
- Fresh dill for the garnish

Instructions:
1. Preheat your oven to 180°C (thermostat 6).

2. In a big bowl, mix saltine biscuits. Add the melted butter and mix until you get a moist sand texture.

3. Cup this mixture to the bottom of a hinged mold to form an even crust, then bake for 10 minutes, just enough to turn slightly golden. Take it out of the oven and let it cool.

4. While the crust is cooling, place in a blender the avocado, fresh cheese, juice and zest of lemon, a few pieces of smoked salmon (set some for garnish), and salt and pepper. Mix until you get a smooth and homogeneous consistency.

5. Add the eggs one by one while mixing, until the mixture is well integrated and creamy.

6. Pour the avocado mixture over the cooled crust and smooth the top with a spatula.

7. Bake the cheesecake for about 40 minutes. The top needs to be taken but still slightly wobbly in the center.

8. Let the cheesecake cool to room temperature, then refrigerate for at least 2 hours, ideally overnight, before tearing it apart.

9. Before serving, garnish with leftover smoked salmon and some fresh dill sprouts. Serve well fresh and enjoy every bite!
