⭐ One-Pan Chicken Thighs with Root Veggies & Herbs 🌿

🛒 Ingredients:
6–8 chicken thighs
600 g mixed root vegetables (potatoes, carrots, parsnips) 🥕🥔
1 red bell pepper 🌶️
1 small broccoli head
3 tbsp olive oil
2 cloves garlic, minced 🧄
1 tsp Italian seasoning
Salt & black pepper
Fresh parsley for garnish 🌿
👩🍳 Instructions:
Preheat oven to 200°C (390°F). Chop all vegetables into chunks and place in a large roasting tray. Drizzle with olive oil, garlic, seasoning, salt, and pepper. Toss to coat. Place chicken thighs skin-side up on top. Roast for 50 minutes or until chicken is golden and vegetables are tender. Garnish with parsley and serve.
