Easter Swirl Pie π°π
Ingredients:
2 1β2 cups graham cracker crumbs (or vanilla cookie crumbs) πͺ
1β2 cup unsalted butter, melted π§
2 tbsp sugar π¬
1 pkg cream cheese, softened π§
1 cup powdered sugar π
1 cup heavy whipping cream π₯
1 tsp vanilla extract π¦
1 cup lemon-lime flavored yogurt (or lemon curd for a tangier flavor) π
1 cup strawberry-flavored yogurt (or fresh strawberry puree) π
Whipped cream (optional) βοΈ
Fresh strawberries or blueberries (optional) ππ«
Lemon zest (optional) π
Directions:
1. Let's kick things off by preparing the crust! Combine the graham cracker crumbs, melted butter, and sugar in a bowl. Press this mixture firmly into a 9-inch pie dish and then pop it in the fridge to chill.
2. Now, weβre making the creamy base! In a large mixing bowl, beat together the softened cream cheese and powdered sugar until itβs smooth and delightful. Then, add the heavy whipping cream and vanilla extract, and continue beating until you reach those lovely stiff peaks!
3. Time to divide the filling! Split the cream cheese mixture evenly into two bowls. In one bowl, fold in the lemon-lime yogurt, and in the other, fold in the strawberry yogurt. Make sure each one is mixed well but be careful not to overmix!
4. Letβs create that gorgeous swirl! Spoon alternating dollops of the lemon-lime mixture and strawberry mixture onto your chilled crust. Grab a knife or a skewer and gently swirl the colors together. Just a few swirls will doβdonβt over-swirling, we want those beautiful distinct streaks!
5. Cover your pie loosely with plastic wrap and slide it into the refrigerator for at least 4 hoursβor overnight if you can wait! This will let the filling set perfectly.
6. Itβs garnishing time! Once set, feel free to add the optional whipped cream, fresh strawberries, blueberries, and a sprinkle of lemon zest on top for that photo-ready finish!
Enjoy your delicious Easter Swirl Pie!
