Pineapple Ice Cream
Ingredients:
2 cups frozen pineapple chunks
1/2 cup pineapple juice
1/2 cup vanilla ice cream or frozen yogurt
1/4 cup coconut milk or regular milk (adjust for consistency)
1 tbsp honey or sugar (optional, depending on sweetness of pineapple)
Fresh pineapple chunks (for serving, optional)
Directions:
In a high-powered blender or food processor, combine frozen pineapple, pineapple juice, vanilla ice cream, coconut milk, and honey (if using).
Blend until smooth and creamy. If needed, add a splash more milk to help blend.
For a soft-serve texture, spoon into a piping bag and swirl into cups.
Optionally, layer or top with fresh pineapple chunks for added texture.
Serve immediately for that dreamy swirl or freeze for 15 minutes for a firmer scoop.
