Creamy Garlic Mushroom Chicken with Pasta
Ingredients:
2 boneless, skinless chicken breasts (sliced thin)
2 tablespoons olive oil
3 tablespoons butter
4 cloves garlic, minced
8 oz mushrooms, sliced
1 teaspoon Italian seasoning
1/2 teaspoon smoked paprika
1 teaspoon salt
1/2 teaspoon black pepper
1 cup heavy cream
1/2 cup chicken broth
1/2 cup grated Parmesan cheese
8 oz fettuccine or pasta of choice
2 tablespoons fresh parsley, chopped (for garnish)
Directions:
Cook the Pasta:
Bring a pot of salted water to a boil and cook fettuccine according to package instructions.
Drain and set aside.
Cook the Chicken:
Heat olive oil in a large skillet over medium-high heat.
Season chicken slices with salt, pepper, smoked paprika, and Italian seasoning.
Cook for 4-5 minutes per side until golden brown and fully cooked.
Remove from skillet and set aside.
Prepare the Garlic Mushroom Sauce:
In the same skillet, melt butter and sauté garlic for 30 seconds until fragrant.
Add mushrooms and cook for 3-4 minutes until tender.
Pour in chicken broth and let it simmer for 2 minutes.
Stir in heavy cream and Parmesan cheese, cooking until the sauce thickens.
Combine & Serve:
Return the chicken to the skillet and let it simmer in the sauce for 2 minutes.
Toss in the cooked pasta and mix until fully coated.
Garnish with fresh parsley and serve hot!
