Oatmeal Raisin Cookie Bars

Ingredients:

1 cup unsalted butter, softened to room temperature
1 cup packed brown sugar
½ cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg (optional)
½ teaspoon salt
3 cups old-fashioned rolled oats
1 cup raisins
Directions:

Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or lightly grease it for easy removal.
In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy (about 2–3 minutes).
Beat in the eggs one at a time, followed by the vanilla extract, mixing until fully incorporated.
In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg (if using), and salt.
Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined. Be careful not to overmix.
Stir in the rolled oats and raisins, ensuring they're evenly distributed throughout the dough.
Transfer the dough to the prepared baking pan. Use a spatula or your hands to press it evenly into the pan, creating a smooth, uniform layer.
Bake in the preheated oven for 20–25 minutes, or until the edges are golden brown and the center is set.
Remove from the oven and let the bars cool completely in the pan on a wire rack before slicing.
Once cooled, lift the bars out of the pan using the parchment paper and slice them into squares or rectangles. Dust with powdered sugar for an extra touch of sweetness, if desired.
