Frozen S’mores Cheesecake Bars
Ingredients
For the Graham Cracker Crust
1 ½ cups graham cracker crumbs (about 10-12 crackers)
¼ cup granulated sugar
½ cup unsalted butter, melted
For the Cheesecake Layer
8 oz cream cheese, softened
1 cup powdered sugar
1 tsp vanilla extract
1 ½ cups heavy whipping cream
For the Chocolate Pudding Layer
1 (3.9 oz) box instant chocolate pudding mix
2 cups cold milk
For the Marshmallow Topping
2 cups marshmallow fluff (or melted mini marshmallows)
½ cup heavy cream
Optional Garnish
Crushed graham crackers
Chocolate shavings
Mini marshmallows
Instructions
1. Prepare the Crust
Line a 9x9-inch baking dish with parchment paper.
In a bowl, mix graham cracker crumbs, sugar, and melted butter until it resembles wet sand.
Press firmly into the bottom of the prepared pan. Place in the freezer while you prepare the next layer.
2. Make the Cheesecake Layer
In a mixing bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
In a separate bowl, whip heavy cream until stiff peaks form.
Gently fold the whipped cream into the cream cheese mixture until combined.
Spread evenly over the chilled crust. Return to the freezer.
3. Prepare the Chocolate Pudding Layer
In a bowl, whisk together instant pudding mix and cold milk for 2 minutes until thickened.
Spread over the cheesecake layer and return to the freezer for at least 30 minutes.
4. Make the Marshmallow Topping
In a small saucepan, heat heavy cream over low heat (don’t boil).
Stir in marshmallow fluff until smooth.
Let it cool slightly, then spread over the pudding layer.
5. Freeze & Serve
Cover with plastic wrap and freeze for at least 4 hours (overnight is best!).
Once frozen, slice into bars.
Garnish with extra graham crackers, chocolate shavings, or mini marshmallows.

Let the bars sit at room temperature for 5-10 minutes before serving to soften slightly.
