Oyster Stew 🦪🍲
Ingredients:
2 cups fresh shucked oysters (with their liquid) or 1 can of oysters, drained
3 tablespoons unsalted butter
1 small onion, finely chopped
2 cloves garlic, minced
2 cups whole milk
1 cup heavy cream
1/2 cup chicken broth
1/2 teaspoon celery salt (or finely diced celery, sautéed)
1/4 teaspoon paprika
Salt and pepper to taste
Fresh parsley or chives, chopped (for garnish)
Crackers or crusty bread (for serving)
Instructions:
Sauté Aromatics:

In a large pot, melt butter over medium heat.
Add the chopped onion and garlic, and sauté for 3-4 minutes until soft and fragrant.
Cook the Oysters:

Add the oysters (and their liquid if fresh) to the pot.
Cook for 3-5 minutes, stirring gently, until the edges of the oysters curl.
Make the Stew:

Stir in the chicken broth, whole milk, and heavy cream.
Add the celery salt, paprika, salt, and pepper.
Bring to a gentle simmer over low heat (do not let it boil, or the milk may curdle). Simmer for 10-15 minutes, stirring occasionally.
Taste and Adjust:

Taste the stew and adjust the seasoning as needed with more salt, pepper, or paprika.
Garnish and Serve:

Ladle the stew into bowls, garnish with fresh parsley or chives, and serve with crackers or crusty bread on the side.
Notes:
For a richer flavor, add a splash of lemon juice or a pinch of cayenne pepper.
If you prefer a thicker stew, mix 1 tablespoon of flour with a bit of cold water and stir it in during step 3.
This dish pairs perfectly with a crisp green salad or roasted veggies.
