Blueberry Cheesecake Swirl Cake 🧀
Ingredients:
For the Cake:
1 box vanilla cake mix (prepared as per package instructions)
1 cup fresh blueberries
For the Cheesecake Swirl:
8 oz cream cheese, softened
1/2 cup granulated sugar
1 teaspoon vanilla extract
1 large egg
1 tablespoon lemon juice
Directions:
Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
Follow the instructions on the vanilla cake mix box and pour it into the prepared pan.
In a medium bowl, blend the softened cream cheese, granulated sugar, vanilla extract, egg, and lemon juice until smooth and well-combined.
Drop spoonfuls of the cheesecake mixture onto the cake batter and use a knife or skewer to swirl them together, creating a marbled pattern.
Sprinkle fresh blueberries over the top, gently pressing them into the batter.
Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
