Savory Herb-Wrapped Mushroom Wellies
Ingredients:
For the Mushroom Filling:
- 2 cups cremini or button mushrooms, finely chopped
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- ½ teaspoon ground black pepper
- ½ teaspoon salt
For the Herb Wrapping:
- 1 sheet puff pastry, thawed
- 2 tablespoons fresh parsley, finely chopped
- 1 tablespoon fresh thyme leaves, finely chopped
- 1 egg, beaten (for egg wash)
Directions:
1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. Heat olive oil in a skillet over medium heat. Add the diced onions and sauté until soft and translucent.
3. Add the minced garlic and chopped mushrooms to the skillet. Cook until the mushrooms release their moisture and it evaporates, about 8-10 minutes. Stir in dried thyme, rosemary, salt, and pepper. Remove from heat and let the filling cool.
4. Roll out the puff pastry on a lightly floured surface. Cut it into 6-8 squares, depending on your desired size.
5. Spoon a small amount of the mushroom filling onto the center of each puff pastry square. Fold the corners together to seal the filling, forming a neat parcel.
6. Brush the tops of each parcel with the beaten egg, and sprinkle fresh parsley and thyme on top for a fragrant herb crust.
7. Place the wrapped parcels on the prepared baking sheet. Bake for 18-20 minutes or until the pastry is golden brown and puffed.
8. Let the mushroom wellies cool slightly before serving. Serve warm for the best flavor.
