Total Time: 40 minutes
Ingredients
For the Chicken Thighs
4 bone-in, skin-on chicken thighs
1/2 cup BBQ sauce (sweet and smoky variety)
1 teaspoon smoked paprika
Salt and pepper, to taste
1 tablespoon olive oil
For the Garlic Butter Corn
4 ears of corn, husked
4 tablespoons unsalted butter
3 cloves garlic, minced
1 tablespoon fresh parsley, chopped (for garnish)
Salt and pepper, to taste
Instructions
Prepare the Chicken
Preheat Oven: Preheat your oven to 400°F (200°C).
Season Chicken: Pat the chicken thighs dry and season with smoked paprika, salt, and pepper.
Sear Chicken: In a large oven-safe skillet, heat olive oil over medium-high heat. Sear the chicken thighs, skin side down, for about 5-7 minutes until golden brown. Flip and sear for another 3-4 minutes.
Add BBQ Sauce: Brush the chicken thighs with BBQ sauce, then transfer the skillet to the oven. Bake for 20-25 minutes until the chicken is cooked through.
Prepare the Garlic Butter Corn
Cook Corn: While the chicken is baking, bring a large pot of water to a boil. Add the corn and cook for about 5-7 minutes until tender. Drain and set aside.
Make Garlic Butter: In a skillet, melt the butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Season with salt and pepper.
Toss Corn: Add the cooked corn to the skillet and toss to coat in the garlic butter. Cook for another 2-3 minutes to heat through.
Serve
Plate the Dish: Serve the BBQ chicken thighs hot, alongside the garlic butter corn, garnished with fresh parsley.
Tips and Variations
Grill Option: Grill the chicken thighs for extra smoky flavor.
Add Spice: Mix in some cayenne pepper to the BBQ sauce for heat.
