Ingredients:
1 rotisserie chicken, shredded
2 tbsp olive oil or butter
1 medium onion, chopped
2 cloves garlic, minced

4 cups chicken broth
1 cup heavy cream
1/2 tsp thyme

1/4 cup fresh parsley, chopped (for garnish)
Directions:
In a large pot, heat olive oil or butter over medium heat. Add the chopped onion and garlic and sauté for about 3 minutes until softened.
Add the sliced mushrooms and cook for another 5 minutes until they release their moisture and begin to brown.
Pour in the chicken broth, and bring the mixture to a simmer. Cook for 10-15 minutes to allow the flavors to develop.
Stir in the shredded rotisserie chicken, heavy cream, and thyme. Continue simmering for another 5-7 minutes.
