🍗🥣 Chicken and Dumplings
- Ingredients:
For the Soup:
2 tbsp butter
1 small onion, chopped
2 carrots, sliced
2 celery stalks, chopped
3 cloves garlic, minced
4 cups chicken broth
2 cups cooked shredded chicken (rotisserie or boiled)
1 tsp salt
½ tsp black pepper
1 tsp thyme
1 tsp parsley
½ cup heavy cream
For the Dumplings:
1 cup all-purpose flour
1 ½ tsp baking powder
½ tsp salt
½ cup milk
2 tbsp butter, melted
- Instructions:
1️⃣ Make the Soup:
In a large pot, melt butter over medium heat.
Add onion, carrots, and celery, cooking until soft (about 5 minutes).
Stir in garlic and cook for another minute.
Pour in chicken broth, add shredded chicken, salt, black pepper, thyme, and parsley.
Bring to a simmer and let cook for 10 minutes.
Stir in heavy cream.
2️⃣ Make the Dumplings:
In a bowl, whisk together flour, baking powder, and salt.
Add milk and melted butter, stirring until a dough forms.
3️⃣ Cook the Dumplings:
Drop spoonfuls of the dumpling dough into the simmering soup.
Cover and cook for 15 minutes without stirring, until dumplings are fluffy and cooked through.
4️⃣ Serve & Enjoy:
Garnish with extra parsley and serve warm.
