Lemon School Dinner Traybake πβ¨
This nostalgic lemon traybake is a true British classic, bringing back memories of school dinners. Light, fluffy, and topped with a sweet lemon icing and cheerful sprinkles, itβs perfect for teatime or a simple treat with family and friends!
Ingredients
For the Cake:
π Lemon zest: 2 lemons, finely grated
π§ Unsalted butter: 200g, softened
π Caster sugar: 200g
π₯ Eggs: 4 large
π° Self-raising flour: 200g
π₯ Milk: 2 tbsp
For the Icing:
π Lemon juice: 2 tbsp (from the zested lemons)
π© Icing sugar: 250g
π Sprinkles: 2 tbsp
Method
π³ Preheat the oven to 180Β°C (160Β°C fan) or Gas Mark 4. Grease and line a rectangular baking tin (about 20cm x 30cm) with baking paper.
π§ Cream together the butter and sugar in a large mixing bowl until pale and fluffy.
π₯ Add the eggs one at a time, beating well after each addition.
π Fold in the lemon zest, followed by the self-raising flour. Add the milk and gently mix until smooth.
π₯ Pour the batter into the prepared tin and level it with a spatula.
π Bake for 25β30 minutes, or until a skewer inserted into the centre comes out clean. Leave the cake to cool completely in the tin.
π Mix the icing sugar and lemon juice in a bowl until you have a thick but spreadable icing. Adjust with a little more icing sugar or lemon juice if needed.
π© Spread the icing evenly over the cooled cake and sprinkle with colourful sprinkles for that classic school vibe.
