Ingredients (serves 6)
1 lb ground beef (or ground turkey)
1 tbsp olive oil or butter
½ medium onion, diced
2 cloves garlic, minced
1 (10 oz) can diced tomatoes with green chilies (sugar-free)
3 cups beef broth (low-sodium)
4 oz cream cheese, softened
1 cup heavy cream
1 cup shredded cheddar cheese
1 tsp chili powder
1 tsp paprika
½ tsp cumin
½ tsp oregano
Salt & pepper, to taste
Optional toppings: sliced jalapeños, avocado, cilantro, extra shredded cheese, pork rinds for crunch
Directions
Cook beef: In a large pot or Dutch oven, heat olive oil over medium heat. Add ground beef, onion, and garlic. Cook until beef is browned and onion is softened. Drain excess grease.
Add seasonings & broth: Stir in chili powder, paprika, cumin, oregano, salt, and pepper. Add the canned tomatoes and beef broth. Bring to a simmer for 10 minutes.
Make it creamy: Reduce heat to low. Stir in cream cheese until melted and smooth. Add heavy cream and cheddar cheese, stirring until combined.
Simmer: Let soup cook on low for another 10–15 minutes, stirring occasionally, until thick and cheesy.
Serve: Ladle into bowls and top with jalapeños, avocado, cilantro, extra cheese, or pork rinds for crunch.
