**WOULD ANYONE EAT THIS Beef And Barley Soup !**

**Ingredients:**

1 pound beef stew meat, cubed
1 tablespoon olive oil
1 onion, diced
2 carrots, peeled and sliced
2 celery stalks, sliced
3 cloves garlic, minced
1 cup pearl barley
8 cups beef broth
2 bay leaves
1 teaspoon dried thyme
Salt and pepper to taste
Chopped fresh parsley for garnish (optional)

**Directions:**

In a large pot, heat the olive oil over medium-high heat. Add the beef stew meat and cook until browned on all sides, about 5-7 minutes.
Add the diced onion, sliced carrots, celery, and minced garlic to the pot. Cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
Stir in the pearl barley, beef broth, bay leaves, and dried thyme. Bring the soup to a boil, then reduce the heat to low. Cover and simmer for 1 hour, or until the beef is tender and the barley is cooked through.
