Texas Style Cowboy Stew
Ingredients
- 1 pound ground beef
- 1 pound smoked sausage, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cans (15 oz each) ranch-style beans
- 2 cans (14.5 oz each) diced tomatoes
- 1 can (15 oz) whole kernel corn, drained
- 4 cups beef broth
- 2 cups potatoes, diced
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
1. Cook Meat: In a large pot, cook the ground beef, smoked sausage, onion, and garlic over medium heat until the beef is browned and the onions are soft. Drain excess fat.
2. Add Ingredients: Stir in the ranch-style beans, diced tomatoes (with juice), corn, beef broth, and potatoes.
3. Season: Add chili powder, salt, and pepper.
4. Simmer: Bring to a boil, then reduce heat. Cover and simmer for 45 minutes to 1 hour, stirring occasionally, until potatoes are tender.
5. Serve: Enjoy the stew hot, optionally with crusty bread or crackers.
