1 cup (225g) unsalted butter, softened
½ cup (60g) confectioners’ sugar
¼ cup (30g) cocoa powder
1½ cups (180g) all-purpose flour
¼ tsp salt
½ tsp vanilla extract
For the Creamy Cannoli Filling:
8 oz (225g) whole-milk ricotta cheese
¾ cup (90g) confectioners’ sugar
1 tsp vanilla extract
¼ tsp cinnamon
¼ cup (40g) mini chocolate chips
Zest of 1 orange (optional, for brightness)
For Dipping & Decorating:
1 cup (170g) semisweet chocolate chips
1 tbsp coconut oil
Sprinkles, chopped pistachios, or crushed biscotti (optional)
🔪 Instructions
Step 1: Make the Cookie Dough
In a large bowl, beat together butter, powdered sugar, cocoa powder, and vanilla until smooth and fluffy.
Add flour and salt gradually, mixing on low speed until dough comes together.
Flatten into a disc, wrap in plastic, and chill for 30 minutes for easier handling.
Step 2: Roll & Cut the Cookies
Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
Roll out chilled dough on a lightly floured surface to about ¼-inch thickness.
Use small round cookie cutters (about 1.5–2 inches) to cut out shapes.
Place on prepared baking sheets and bake for 10–12 minutes , until set but not browned. Let cool completely.
Step 3: Prepare the Cannoli Filling
In a bowl, whisk ricotta cheese with powdered sugar until smooth and creamy.
Stir in vanilla, cinnamon, and orange zest if using.
Fold in mini chocolate chips for a delightful texture contrast.
Step 4: Assemble the Sandwiches
Spoon or pipe the ricotta mixture onto the flat side of half the cookies.
Top with remaining cookies to form sandwiches.
Step 5: Dip & Decorate
Melt chocolate chips with coconut oil in a microwave-safe bowl in 30-second intervals, stirring until smooth.
Dip the top half of each cookie sandwich into the chocolate or drizzle it over the top.
While wet, add sprinkles, crushed nuts, or biscotti bits for extra flair.
Let chocolate set at room temperature or refrigerate briefly to speed up the process.
