Ingredients
• 1 eggplant, thinly sliced
• 1 zucchini, thinly sliced
• 1 bell pepper, diced
• 1 onion, finely chopped
• 2 cloves garlic, minced
• 2 cups (480ml) crushed tomatoes
• 2 tbsp (30ml) olive oil
• 1 tsp dried thyme (or fresh thyme sprigs)
• Salt & pepper, to taste
Instructions
1️⃣ Sauté the aromatics – Heat olive oil in a large skillet. Sauté onion, garlic, and bell pepper until soft and fragrant.
2️⃣ Make the sauce – Add crushed tomatoes, thyme, salt, and pepper. Stir well and simmer for 10 minutes to develop flavor.
3️⃣ Assemble the dish – In a baking dish, layer the eggplant and zucchini slices in a circular or shingled pattern.
4️⃣ Bake – Pour the tomato sauce over the vegetables. Cover with foil and bake at 375°F (190°C) for 25–30 minutes until tender.
5️⃣ Serve – Enjoy warm or at room temperature with crusty bread, rice, or as a side to grilled meats.
