Ingredients:

1 large butternut squash, peeled and cubed
1 tablespoon olive oil
Salt and pepper, to taste
12 ounces jumbo pasta shells
1 pound turkey sausage, casings removed
1 small onion, diced
2 cloves garlic, minced
1/2 teaspoon crushed red pepper flakes (optional)
1/2 teaspoon dried sage
1/4 cup grated Parmesan cheese
1/2 cup ricotta cheese
1/2 cup shredded mozzarella cheese, plus more for topping
2 tablespoons fresh parsley, chopped (for garnish)

Instructions:

Roast the Butternut Squash:

Preheat your oven to 400ยฐF (200ยฐC).
Toss the cubed butternut squash with olive oil, salt, and pepper.
Spread the squash on a baking sheet and roast for 25-30 minutes or until tender.
Set aside to cool slightly.

Cook the Pasta Shells:

While the squash is roasting, cook the pasta shells according to the package instructions until al dente.
Drain the shells and set them aside.
