Creamy Cajun Chicken Tortellini with Mozzarella Garlic Cheese Sauce

Ingredients:

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
2 tablespoons Cajun seasoning
1 tablespoon olive oil
4 cloves garlic, minced
1 (20 ounce) package frozen cheese tortellini
4 tablespoons butter
4 tablespoons all-purpose flour
3 cups milk
8 ounces cream cheese, softened
4 ounces Velveeta cheese, cubed
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
1/2 teaspoon black pepper
1/4 teaspoon paprika

Directions:

In a bowl, toss the chicken pieces with Cajun seasoning until evenly coated.
Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook until golden brown and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, melt the butter over medium heat. Whisk in the flour until smooth. Gradually whisk in the milk until there are no lumps.
Bring the mixture to a simmer, stirring constantly. Reduce the heat to low and add the cream cheese and Velveeta cheese. Stir until the cheeses are completely melted and the sauce is smooth.
Stir in the mozzarella cheese and Parmesan cheese until melted and the sauce is creamy and cheesy. Add the garlic powder, black pepper, and paprika. Stir to combine.
Cook the tortellini according to package directions. Drain well.
Add the cooked tortellini and the cooked chicken to the cheese sauce. Stir gently to coat.
Serve immediately, garnished with a sprinkle of extra mozzarella cheese, if desired.
