PECAN COBBLER
~~Ingredients ~~
6 Tablespoons unsalted Butter
1-3/4 cups Light brown Sugar, divided into 1 cup and 3/4 cup
1 cup all purpose flour
1-1/2 teaspoons Baking Powder
1/2 teaspoon Salt
1/2 cup Whole Milk
2 teaspoons pure Vanilla Extract
1-1/2 cups Pecans, chopped
1-1/2 cups Boiling Water
~~Instructions ~~
Preheat oven to 350 degrees.
Place butter in a 2-quart baking dish with 1 cup of the pecans and place in a 350 degree F oven to melt the butter.
In a bowl, mix the flour, baking powder and salt and stir. Then add the milk and vanilla extract and mix together. Drop by the spoonfuls onto the melted butter and pecans, do not stir. Mix the remaining 1 cup of light brown sugar with the remaining 1 cup pecans and sprinkle on top, do not stir. Gently pour the boiling water over the top. Bake for 45 to 50 minutes until set. Let cool 20 minutes before serving with ice cream, cool whip or just eat as is
