Crockpot French Onion Meatloaf with Melted Swiss Cheese
Ingredients:
2 lbs ground beef (80/20 blend)
1 packet dry French onion soup mix
1 cup breadcrumbs
2 large eggs
½ cup milk
1 tablespoon Worcestershire sauce
1 teaspoon garlic powder
½ teaspoon black pepper
1 large onion, sliced
1 can (10.5 oz) condensed French onion soup
1 ½ cups shredded Swiss cheese
Fresh parsley, chopped (for garnish)
Directions:
In a large bowl, combine ground beef, dry onion soup mix, breadcrumbs, eggs, milk, Worcestershire sauce, garlic powder, and black pepper. Mix gently until combined.
Form the mixture into a loaf shape and place in the crockpot.
Arrange sliced onions around and on top of the meatloaf. Pour condensed French onion soup over everything.
Cover and cook on low for 6–7 hours or high for 3–4 hours, until meatloaf is cooked through (internal temp 160°F/70°C).
Sprinkle shredded Swiss cheese over the top during the last 10 minutes of cooking. Cover until cheese is melted and bubbly.
Garnish with parsley and serve warm with mashed potatoes or crusty bread.
