Keto Cheesy “Tater Tot” Casserole
Ingredients
1 lb ground sausage (or ground beef)
1 small onion (optional, or use onion powder for fewer carbs)
3 cups frozen cauliflower tots (you can buy keto-friendly ones or make homemade — recipe below)
1 ½ cups shredded cheddar cheese (divided)
4 large eggs
½ cup heavy cream
½ tsp garlic powder
½ tsp paprika
Salt & pepper to taste
Instructions
Cook the Meat
In a skillet, brown the sausage (or beef) until fully cooked. Drain extra grease.
Layer the Casserole
Preheat oven to 375°F (190°C).
In a greased 9x13 baking dish, spread the cooked sausage evenly.
Sprinkle 1 cup of cheddar cheese over the sausage.
Place the cauliflower tots in a single layer over the top.
Make the Egg Mixture
In a bowl, whisk together eggs, heavy cream, garlic powder, paprika, salt, and pepper.
Pour evenly over the casserole.
Top & Bake
Sprinkle remaining ½ cup cheese on top.
Bake for 30–35 minutes until golden brown and bubbly.
Serve Hot
Let cool slightly, then slice into squares and enjoy!

3 cups riced cauliflower (steamed and squeezed dry)
1 large egg
½ cup shredded cheddar cheese
¼ cup almond flour
½ tsp garlic powder, salt, pepper
Mix together, shape into small tots, and bake at 400°F for 20 minutes before using in the casserole.
