Keto Cloud Bread Recipe
Ingredients
3 large eggs, separated
3 tbsp cream cheese (softened, room temp) or Greek yogurt
¼ tsp cream of tartar (for stability, optional)
½ tsp baking powder (optional, for extra fluff)
Pinch of salt
1 tbsp erythritol or monk fruit (optional, if you want it slightly sweet)
Instructions
Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
Separate the eggs – put yolks in one bowl and whites in another.
Whip the egg whites with cream of tartar and salt using an electric mixer until stiff peaks form.
Mix yolks with cream cheese (or yogurt), baking powder, and sweetener (if using) until smooth.
Fold whites into yolk mixture gently in 3 additions. Don’t overmix, or you’ll lose the fluffiness.
Scoop batter onto the parchment in round shapes (about 8 rounds). Smooth tops with a spoon.
Bake for 25–30 minutes until golden brown.
Cool completely before stacking or storing.

Store in the fridge in an airtight container for up to 5 days, or freeze.
