Pineapple Paradise Cake

Ingredients:

- 1 box yellow cake mix
- 1 cup crushed pineapple, drained
- 1/2 cup vegetable oil
- 4 large eggs
- 1/4 cup pineapple juice (reserved from crushed pineapple)
- 1 teaspoon vanilla extract
- 1 can (8 oz) crushed pineapple, undrained
- 1 package (8 oz) cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
- 1 cup shredded coconut, toasted
- Maraschino cherries for garnish (optional)

Directions:

1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
2. In a large mixing bowl, combine the cake mix, drained crushed pineapple, vegetable oil, eggs, pineapple juice, and vanilla extract. Beat with an electric mixer on medium speed for 2 minutes until well blended.
3. Pour batter evenly into the prepared pans and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
4. Remove cakes from oven and cool in pans for 10 minutes. Then remove from pans and cool completely on wire racks.
5. For the frosting, beat the cream cheese and butter together in a medium bowl until smooth and creamy.
6. Gradually add powdered sugar, beating until light and fluffy. Stir in the vanilla extract.
7. Place one cake layer on a serving plate. Spread a layer of crushed pineapple (undrained) over the cake.
8. Spread a thick layer of cream cheese frosting over the pineapple.
9. Top with the second cake layer and frost the top and sides with the remaining cream cheese frosting.
10. Sprinkle toasted shredded coconut over the top and sides of the cake.
11. Garnish with maraschino cherries if desired. Chill the cake for at least 1 hour before serving for best flavor.
