Keto Beef & Cheese Roll-Ups
Ingredients
For the Cheese Wraps
2 cups shredded mozzarella (or provolone)
½ cup grated Parmesan
For the Beef Filling
1 lb ground beef
½ cup green bell pepper, diced
½ cup onion, diced (optional — can reduce for lower carbs)
1 tbsp olive oil or butter
1 tsp garlic powder
1 tsp smoked paprika
½ tsp salt
½ tsp black pepper
Optional Garnish
Fresh parsley, chopped
Sour cream or keto-friendly salsa
Instructions
Step 1: Make the Cheese Wraps
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
Spread mozzarella and Parmesan into 4–6 round piles (about ¼ cup cheese each).
Bake 5–7 minutes until melted and lightly golden.
Let cool 1–2 minutes until flexible but not brittle.
Step 2: Cook the Beef Filling
Heat olive oil in a skillet over medium heat.
Add onions and peppers, cook 3–4 minutes until softened.
Add ground beef, garlic powder, paprika, salt, and pepper. Cook until browned, drain excess fat.
Step 3: Assemble
Place some beef mixture onto each cheese wrap.
Roll up tightly while still warm.
Arrange seam-side down on a plate, garnish with parsley.
