Crispy Lobster Bites with Garlic Butter Sauce
Ingredients:
1 lb lobster tail meat, cut into bite-sized chunks
1 cup buttermilk
1 cup all-purpose flour
1/2 cup cornmeal
1 tsp paprika
1/2 tsp cayenne pepper (optional)
Salt and black pepper, to taste
Vegetable oil, for frying
Garlic Butter Sauce:
1/2 cup unsalted butter
4 cloves garlic, minced
1 tbsp lemon juice
1 tbsp chopped fresh parsley
Pinch of salt
Directions:
Soak the lobster bites in buttermilk for 15–30 minutes to tenderize and flavor.
In a shallow bowl, mix flour, cornmeal, paprika, cayenne (if using), salt, and pepper.
Heat 1–2 inches of oil in a skillet or deep pan over medium-high heat to 350°F (175°C).
Remove lobster from buttermilk, dredge each piece in the flour mixture, coating well.
Fry in batches for 2–3 minutes per side, or until golden and crispy. Drain on paper towels.
In a small saucepan, melt butter over medium heat. Add garlic and sauté for 1 minute. Stir in lemon juice, salt, and parsley.
Drizzle the warm garlic butter sauce over lobster bites or serve as a dipping sauce.
