Spicy Smoky Mozzarella Chicken Alfredo Pasta Skillet

Ingredients:

1 lb boneless skinless chicken breasts, cut into bite-sized pieces
2 tbsp olive oil
1 tsp smoked paprika
½ tsp chili powder
½ tsp garlic powder
½ tsp onion powder
½ tsp salt
¼ tsp black pepper
¼ tsp red pepper flakes (optional, for extra heat)
1/4 tsp cayenne pepper (or more, to taste)
10 oz penne or rotini pasta
2 cups chicken broth
1 cup heavy cream
1 cup shredded mozzarella cheese
½ cup grated Parmesan cheese
2 cloves garlic, minced
1 tbsp butter
Fresh parsley, chopped (for garnish)

Directions:

Heat olive oil in a large skillet over medium-high heat. Add the chicken, then season with smoked paprika, chili powder, garlic powder, onion powder, salt, black pepper, red pepper flakes, and cayenne. Cook for 6–8 minutes, stirring occasionally, until the chicken is browned and cooked through. Remove from the skillet and set aside.
In the same skillet, melt butter over medium heat. Add minced garlic and sauté for 30 seconds, until fragrant.
Pour in the chicken broth and heavy cream. Stir in the uncooked pasta, then bring to a boil. Reduce heat to a simmer, cover, and cook for 12–14 minutes, stirring occasionally, until the pasta is al dente.
Stir in mozzarella and Parmesan cheeses until fully melted and the sauce becomes smooth and creamy.
Return the cooked chicken to the skillet and stir everything together. Let simmer for another 2–3 minutes to blend the flavors.
Garnish with chopped parsley before serving and adjust seasoning if needed.
