📝 Ingredients:
• 500 g white fish (cod or similar)
• 1 onion, chopped
• 2 garlic cloves
• 1 carrot, sliced
• 1 tbsp tomato paste
• 750 ml fish stock
• 1 tsp saffron (optional)
• Olive oil, salt, pepper
👩🍳 Instructions:
1️⃣ Sauté onion, garlic, and carrot in olive oil until soft.
2️⃣ Stir in tomato paste and cook for 1 minute.
3️⃣ Add fish and stock, simmer for 20 minutes.
4️⃣ Remove fish, blend soup, then return fish to pot.
5️⃣ Add saffron, adjust seasoning, and serve with croutons or rouille.
