Salmon Quinoa Power Bowl 🍣🥑
Ingredients:
🍣 Grilled salmon fillet
🍳 Soft-boiled eggs (halved)
🫒 Mixed olives
🥑 Sliced avocado
🍅 Cherry tomatoes
🥬 Baby spinach
🍚 Cooked quinoa (red or tri-color)
🧂 Salt, black pepper & fresh parsley
Instructions:
1. Place a bed of baby spinach in a bowl.
2. Add a scoop of quinoa on top.
3. Arrange the salmon, boiled eggs, avocado, olives, and tomatoes.
4. Sprinkle with salt, pepper, and chopped parsley.
5. Drizzle with olive oil or lemon juice if desired. Enjoy fresh!
