One-Skillet Creamy Spicy Cajun Steak Pasta

Ingredients:

1 pound sirloin steak, cut into 1-inch cubes
1 tablespoon olive oil
1 red bell pepper, thinly sliced
1 orange bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1 medium yellow onion, thinly sliced
3 cloves garlic, minced
1 tablespoon Cajun seasoning (I love Tony Chachere's!)
1 teaspoon smoked paprika
1/2 teaspoon cayenne pepper (adjust to your spice preference)
1/2 teaspoon dried thyme
1/4 teaspoon dried oregano
1 (14.5 ounce) can diced tomatoes, undrained
4 cups chicken broth
8 ounces pasta (penne, rotini, or farfalle work great)
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/4 cup chopped fresh parsley
2 tablespoons thinly sliced green onions for garnish
Salt and freshly ground black pepper to taste
Optional: A squeeze of fresh lemon juice to brighten the flavors

Directions:

1. Season the steak cubes generously with salt, pepper, and half of the Cajun seasoning.
2. Heat the olive oil in a large skillet over medium-high heat. Add the steak and cook until browned on all sides, about 3-5 minutes. Remove the steak from the skillet and set aside.
3. Add the bell peppers and onion to the skillet and cook until softened, about 5-7 minutes. Add the garlic, smoked paprika, cayenne pepper, thyme, oregano, and remaining Cajun seasoning and cook for another minute until fragrant.
4. Stir in the diced tomatoes (undrained) and chicken broth. Bring to a boil, then add the pasta. Reduce heat to medium-low, cover, and simmer for 12-15 minutes, or until the pasta is cooked through and the liquid has been absorbed. Stir occasionally to prevent sticking.
5. Stir in the heavy cream and Parmesan cheese until the sauce is smooth and creamy. Return the steak to the skillet and heat through.
6. Taste and adjust seasonings as needed. Add a squeeze of fresh lemon juice if desired.
7. Garnish with fresh parsley and green onions. Serve immediately and enjoy!
