Cheesecake with Strawberry Sauce πŸ°πŸ“
Ingredients:
For the Cheesecake:

1 Β½ cups graham cracker crumbs (about 1 package of graham crackers)

2 tbsp sugar (for the crust)

Β½ cup butter (melted, for the crust)

4 packages (8 oz each) cream cheese (softened)

1 cup sugar

1 tsp vanilla extract

4 large eggs (room temperature)

1 cup sour cream

ΒΌ cup all-purpose flour

For the Strawberry Sauce:

2 cups fresh strawberries (hulled and halved)

1 cup sugar

1 tbsp lemon juice

Β½ cup water

1 tbsp cornstarch (optional for thicker consistency)

For the White Chocolate Drizzle:

4 oz white chocolate chips

1 tbsp heavy cream

Instructions:1. Prepare the Cheesecake Crust:

Preheat your oven to 325Β°F (163Β°C).

In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until everything is well coated.

Press the mixture into the bottom of a greased 9-inch springform pan, using the back of a spoon to pack it tightly.

Bake the crust for 10 minutes, then remove from the oven and let it cool while you prepare the filling.

2. Make the Cheesecake Filling:

In a large mixing bowl, beat the softened cream cheese and sugar together until smooth and creamy (about 2-3 minutes).

Add in the vanilla extract and flour, and beat until combined.

Add the eggs one at a time, beating after each addition. Scrape down the sides of the bowl as needed.

Stir in the sour cream until the batter is smooth and uniform.

3. Bake the Cheesecake:

Pour the cheesecake batter into the cooled crust. Tap the pan gently on the counter to release any air bubbles.

Bake for 1 hour, then turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour. After 1 hour, remove the cheesecake from the oven and allow it to cool completely.

Refrigerate the cheesecake for at least 4 hours or overnight to fully set.

4. Make the Strawberry Sauce:

In a medium saucepan, combine the strawberries, sugar, lemon juice, and water.

Bring the mixture to a simmer over medium heat, stirring occasionally, until the strawberries soften and the syrup thickens (about 5-7 minutes).

For a thicker sauce, whisk in the cornstarch, dissolved in a little water, and cook for an additional 2 minutes.

Remove from heat and let it cool to room temperature.

5. Make the White Chocolate Drizzle:

In a microwave-safe bowl, heat the white chocolate chips and heavy cream in 20-second intervals, stirring after each, until the chocolate is smooth and fully melted.

6. Assemble the Cheesecake:

Once the cheesecake has fully set, drizzle the strawberry sauce over the top, letting it drip down the sides.

Drizzle the white chocolate over the strawberry sauce, and optionally sprinkle extra crushed graham crackers on top.

7. Serve:

Slice and enjoy this Cheesecake with Strawberry Sauce! πŸ°πŸ“
