Garlic Butter Chicken & Spinach Bowls with Alfredo Drizzle π§ππΏπ (Ready in 30 mins β the perfect weeknight meal!)
Ingredients:
1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
4 tbsp butter
4 cloves garlic, minced
1/2 tsp salt
1/4 tsp black pepper
1/4 cup chicken broth
10 oz fresh spinach
1 cup cooked pasta (penne, rotini, or your favorite shape)
1/2 cup Alfredo sauce (store-bought or homemade)
Optional toppings: Parmesan cheese, red pepper flakes
Instructions:
1. Melt 2 tablespoons of butter in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
2. Add the remaining 2 tablespoons of butter to the skillet. Once melted, add the minced garlic and cook for about 30 seconds, or until fragrant. Be careful not to burn the garlic.
3. Stir in the salt and pepper. Pour in the chicken broth and bring to a simmer.
4. Add the cooked pasta and spinach to the skillet. Cook for 2-3 minutes, or until the spinach is wilted.
5. Return the cooked chicken to the skillet and stir to combine everything.
6. Serve the chicken and spinach mixture in bowls. Drizzle each bowl with Alfredo sauce.
7. Garnish with Parmesan cheese and red pepper flakes, if desired. Enjoy!
