Apple Fritter Bites.
Enjoy these delicious bites, perfect for a sweet treat!
Ingredients:
- Nonstick cooking spray, for greasing
- 1 1⁄2 cups all-purpose flour
- 2 tsp baking powder
- 1⁄2 tsp kosher salt
- 2 tsp cinnamon
- 1⁄4 cup unsalted butter, melted
- 1⁄4 cup granulated sugar
- 1 large egg
- 1⁄2 tsp vanilla extract
- 1⁄2 cup no-sugar-added applesauce
- 1 1⁄2 cups peeled and finely diced Honeycrisp apples (about 2 medium apples)
- For the Glaze: 2 cups powdered sugar
- 1⁄3 cup plus 2 TBSP apple cider or apple juice
Directions:
1️⃣ Preheat the oven to 400°F (200°C) and spray a baking sheet with nonstick cooking spray.
2️⃣ In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon until well combined.
3️⃣ In a large bowl, whisk the melted butter and sugar until smooth. Add the egg and vanilla extract, mixing well after each addition. Stir in the applesauce.
4️⃣ Add the dry ingredients to the wet ingredients, stirring until just combined. Fold in the diced apples carefully.
5️⃣ Scoop 1 tablespoon of the batter for each fritter onto the prepared baking sheet, spacing them apart. Bake for 10 minutes or until set and lightly golden.
6️⃣ While the fritters bake, whisk together the powdered sugar and apple cider in a small bowl until smooth.
7️⃣ After baking, brush the fritters with some of the glaze. Broil the glazed fritters for 2-4 minutes, watching closely for even caramelization.
8️⃣ Brush the remaining glaze over the broiled fritters and let them set for about 15 minutes until the glaze hardens.
