π Ingredients:
For the pastry:
π₯ 1 egg yolk
π§ 125g unsalted butter, cold and cubed
πΎ 250g plain flour
π 50g icing sugar
π₯ 2 tbsp cold water
For the filling:
π 100g strawberry jam
π 100g apricot jam
π« 100g blackcurrant jam
π©βπ³ Method:
1οΈβ£ Prepare the pastry: In a bowl, rub the butter into the flour until it resembles breadcrumbs. Stir in the icing sugar. Add the egg yolk and water, mixing until a dough forms. Wrap in cling film and chill for 30 minutes.
2οΈβ£ Roll and cut: Preheat the oven to 180Β°C (fan). Roll out the pastry on a lightly floured surface to about 3mm thick. Use a round cutter to cut out circles and press them into a 12-hole tart tin.
3οΈβ£ Add the jam: Spoon 1 tsp of jam into each tart case. Be careful not to overfill, as the jam will bubble up when baking.
4οΈβ£ Bake: Pop the tray into the oven and bake for 12-15 minutes, or until the pastry is golden. Remove and allow to cool in the tin before transferring to a wire rack.
5οΈβ£ Enjoy! Serve at room temperature with a nice cup of tea. β
