Elegant Cherry Chocolate Treats

Ingredients:
300g dark chocolate, finely chopped
200g dark chocolate, finely chopped (for ganache)
100ml heavy cream
Directions:
Begin by preparing the ganache. In a heatproof bowl, combine the 200g dark chocolate and heavy cream. Heat gently over a double boiler, stirring constantly until the chocolate is fully melted and smooth. Set aside to cool and thicken for about 30 minutes.
Meanwhile, melt the 300g dark chocolate. Using a microwave or double boiler, heat in intervals, stirring between each until smooth and glossy.
Once the dark chocolate is melted, dip each cherry into the melted chocolate, coating it entirely. Place the dipped cherries on a parchment-lined tray.
After all cherries are dipped, use a spoon to scoop a small amount of ganache and place it atop each cherry.
Refrigerate the bonbons for 1-2 hours, or until the chocolate hardens and the ganache firms up.
Once set, serve these delectable treats as an elegant dessert or gift.
