🇮🇹 Pasta al Forno con Melanzane (Baked Pasta with Eggplant) ❤️
Layers of roasted eggplant, penne, tomato sauce, and gooey cheese—Italian comfort food at its best!
Ingredients:
2 large eggplants, sliced (about 600 g)
340 g penne pasta (12 oz)
250 g mozzarella cheese, shredded (1 cup)
480 ml tomato sauce (2 cups)
30 g grated Parmesan (about 1/4 cup)
Olive oil, for roasting
Salt and pepper
Instructions:
🍆 Slice and roast eggplant with a drizzle of olive oil until golden.
🍝 Boil penne until al dente and drain.
🧀 In a baking dish, layer pasta, eggplant, sauce, and cheeses.
🔥 Bake at 180°C (350°F) for 30 minutes, until bubbling and golden.
🌿 Rest for a few minutes, then serve warm with herbs if desired.
